A cocktail inspired cider we made to pair with the Oregon winter weather! Heirloom apples fermented to dry, then aged for 4 months with vanilla beans in Bourbon barrels.

We do minimal intervention so the essential apple flavor shines though, as we leave just a little residual sweetness to showcase the rich apple flavor and aroma. This blend has bright acidity and subtle sweetness. Mountain Rose apples have a delicate red flesh, that glows the perfect blush hue when fermented. Just off-dry, they have lots of acid and aromatics. We fermented just these apples, with a white wine yeast to puckeringly dry, then aged in French Riesling barrels for a month. This blush cider is dry, but with lots of mouth feel from the time in oak.

English cider apples impart significant tannins, hallmark acid balance and just the tiniest hint of funk. Notes of earthiness, grapefruit peel and wild fermentation. One of the earliest apples to ripen on our farm! Fermented partially in wine barrels and part in stainless, we really wanted to highlight the simplicity and delicacy of the Gravenstein flavor. Just off-dry. We used Muscadet de Dieppe apples grown in the Willamette Valley to create this off-dry cider, which has notes of caramel, dates and raisins.
